Whole Roasted Chicken with Chestnuts

I have been a chestnut fan ever since I tasted the roasted ones a few years ago. Every winter, a small stand opens in front of Uwajimaya (a Pacific Northwest Asian grocery store chain) where they sell freshly roasted chestnuts hot from the pan. First time I bought it out of curiosity, and I was hooked with the first bite.
