I am writing this post from Kerala, where I’ve been for the past week. This year has been really hectic so far and then suddenly I end up here having absolutely nothing to do. I am in such a Zen state that all my plans for collecting as many Kerala recipes as I can and blogging frequently are all put on hold. I have so much free time these days I should really be using it in a more productive way, but the lazy part of my brain is telling me to just relax. I’ve been taking pictures and updating my photo blog daily and also been posting food pictures on the facebook page, but updating this blog takes some real effort.  I finally got really tired of looking at the same picture on my homepage though and decided to get off my lazy bum and post something here. So here is a quintessential Kerala dish, chemeen ularthiyathu aka Prawn Roast. 

 Prawn Roast

Ingredients

  • Large Prawns – 12 (~750 g)
  • Chili Powder -  1 tsp
  • Turmeric Powder – 1 pinch
  • Vinegar – 1 tbsp
  • Salt to taste
  • Mustard Seeds – 1 tsp
  • Curry Leaves – a few
  • Pepper Powder – 1.5 tsp
  • Coriander Powder – 1.5 tsp
  • Chili Powder – 1/2 tsp
  • Fenugreek Powder – 1 pinch
  • Garam Masala – 1/4 tsp
  • Ginger Paste – 1 tsp
  • Garlic Paste – 1 tsp
  • Onion, thinly sliced – 1.5 cups
  • Tomatoes, diced – 2 medium sized
  • Curry Leaves
  • Oil – 4 tbsp

 

Method

Clean and devein the prawns and marinate with chili powder, turmeric powder, salt and vinegar and keep aside for 30 minutes.

Heat half of the oil in a pan and fry the prawns turning once half way through till both sides are browned, this will take about 5 minutes. Remove the prawns from the pan and keep aside.

Add the rest of the oil to the pan and add mustard seeds. When the seeds start to splutter, add onions & curry leaves and sauté till soft. Add the tomatoes pieces and sauté for 3-4 minutes.

Add coriander powder, chili powder and turmeric powder and mix well. Sauté for 3 minutes. Add ginger garlic paste and mix well. Then add pepper powder, fenugreek powder and garam masala and cook till the ingredients are well blended and the spices are cooked through.

Add the fried prawns and 1/4 cup hot water and mix well. When it starts to boil, cover and cook for 5 minutes.

Serve hot with rice.

    I’m also coming up with a fat, juicy, prawn recipe next – we made a prawn and avocado salad yesterday. living in the locality we do and the kind of lifestyles we have, even we in India are resorting to frozen stuff for convenience, even if I made the effort to buy fresh, I wouldn’t know how to clean and devein them – but I found that my favourite brand of frozen prawns is back, I hope it’s not a flash in the pan after so many years.

    enjoy your holiday, Sig, at one time, i used to wake up v early and sleep late to make the most of it but dont seem to be able to do that nowadays. sometimes i wish for a lazy, lazy holiday but at the end of the day, i feel i should have used it better.
