Baked Halibut with Lemon-Herb-Butter Sauce

I am struggling  to keep my new year resolution to try and be a more “regular blogger”; without much success.  It is really hard to maintain one hobby, then I had to go and take another one on. A bunch of us are doing a project called Project 365 from the beginning of this year. The idea is to take and post a picture every day for the whole year, to journal our lives one picture at a time. I didn’t think I’d last this long, but it has become sort of an addiction now. Check out my Project 365, now you know why I haven’t been that regular on this blog. But food is still my passion, photography was a byproduct of the food blogging. So I will still try to keep this one fresh, as fresh as I can.

Now off to the recipe of the day, it is your favorite kind – quick and easy. For a quick-fix seafood dinner, my picks are salmon and halibut steak cuts, as there is no cleaning involved. Lately, I haven’t been able to find wild salmon in stores lately, so we have been eating a lot of halibut. As much as I like salmon, I do think that halibut is more suitable for a variety of marinades due to its cleaner, less “fishy” taste. It really doesn’t need much seasoning, anything goes with halibut. This sauce is a particularly simple one, I melted some butter, wilted the herbs, added garlic and tomatoes and lemon juice to make a “sauce” for lack of a better word. Seasoned steak pieces were placed in the pan along with the “sauce” and baked for 15 minutes and voila, dinner’s served! Here’s the before and after pictures, isn’t this simple? Ingredients

  • 1 large halibut steak, cut into two pieces (~ 1lb)
  • Salt and freshly ground pepper for seasoning
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp sliced garlic
  • 2 tbsp chives, chopped
  • 2 tbsp dill, chopped
  • 1/4 cup cherry tomatoes, halved
  • Juice from 1 large lemon
  • Salt and pepper to taste

 

Method

Preheat the oven to 375F. 

Clean and pat dry the halibut and season with salt and pepper on both sides.

In a large oven-safe pan, melt the butter on medium heat, along with olive oil. Stir in the garlic slices and the herbs and switch off the stove. Add the lemon juice and tomatoes and salt and pepper to the pan and mix well to form the sauce.

Use a spatula to move the mixture to a side and place the marinated halibut in the pan. Spoon the sauce over the fish.

Bake in the oven for 20 minutes, turning the fish pieces once (after 12 minutes).

Remove and serve hot with salad or sauteed veggies on the side for a South Beach Diet phase 1 friendly dinner.

IF POSSIBLE ‘Could you pls. suggest/give the alternatives of some spices, vegetables, fruits, legumes and non veggies such as Salmon,etc. cause many of these items available in your country whereas its difficult in Kerala or the English name of these items gives confusion, even after google the net, so would you mind include Indian/Keralite names also while presenting the menu’s products so that it could help many of us residing in India and in the Middle east especially in South India.
