No-Oil Ginger Tamarind Chicken Wings

I’ve been on a doctor recommended blog hiatus for the past couple of weeks. Well, he doesn’t know about the blog, but I was asked to cut down my computer time way down. As much as I wanted to cut the time I spend in front of the PC for work, unfortunately that pays the bills, so the so-called leisure activities had to suffer. I am still supposed to be staying away from here, but after a long time I took a look at the dwindling blog stats today and I had to get something out here. This is going to be a short and sweet spicy post, please bear with me while I strengthen my neck and shoulder muscles a bit.

These flavorful wings are really easy to make and don’t require any extra oil. I am not claiming these are very healthy as the wings have the skin on and chicken skin is pretty fatty. I cut off most of the loose skin, but there was still quite a bit of skin left. The fat from the skin and the yogurt in the dressing produces enough oil in the first phase of the cooking, this oil is used to finish up the wings in the second part.

Ingredients

  • 12 chicken wings, cut off and discard as much skin as possible
  • 1 tbsp tamarind paste (available in Indian and Asian stores)
  • 1/4 cup thinly sliced ginger (1.5 tbsp store bought ginger paste)
  • 2 tbsp thinly sliced shallots
  • 1 small bunch fresh cilantro
  • 1.5 tbsp red chili powder
  • 1/4 tsp garam masala
  • 2 tbsp thick yogurt
  • Salt to taste

Method

Place all the ingredients other than the chicken wings in a food processor and process to form a smooth paste. Pour this over the chicken wings, turn to coat well and marinate for at least 30 minutes.

Pre-heat the oven to 375 F.

Place the wings along with the marinade in an oven-proof non-stick pan and bake uncovered for 25 minutes.

Move the pan to the stove top and cook till the liquid completely evaporates and the wings are well-coated with the spice paste.

Serve hot with any yogurt based dipping sauce.

    About your neck and shoulder muscles, I had severe neck and muscle pain and my chiropractor has become my best friend. It is such a relief. Your posts doesn’t mention it, so I don’t know if you have been seeing one. But any strain in your muscles, a chiropractic visit will surely help.

      Thanks Kay! Yeah I am seeing a chiropractor and a physiotherapist for the past couple of weeks. Chiropractor does help, but then I have to go home and do those stretches, which I am very bad at. :(
      Hope your neck is feeling better, it is the worst pain out there I think!
