Egg Salad Sandwich and Hunger Challenge Day 1 Recap

Today was the first day on the Hunger Challenge
where we had to spend just $12 on breakfast, lunch and dinner for two. I am too tired to type out the details, but here is the table that shows what we had, and how much each meal came to.
Even though the total came very close to the budgeted $12 for the day, I have enough left overs from dinner which will be our lunch tomorrow. So tomorrow’s cost is going to be lower.
I used spices from my pantry, and have added 10 cents each for 1tbsp coriander and 1/2 tbsp chili powder, which is way too much, but I wanted to err on the side of over-estimation.
Since we buy coffee beans in bulk and grind and make our own coffee, it shouldn’t come to 50 cents a cup, but again didn’t want to shortchange there either.
Overall, we did pretty good I think!
It was really nice to take lunch to work, something which I never do, except for some of the initial days of SBD. Cafeteria food is pretty bad, but somehow I never get around to packing a lunch. But today I had to and I made the filling for the egg salad sandwich last night. This was one of the easiest and fastest lunches I’ve ever prepared, and it tasted really, really good! Even if you are not on a budget and just looking for a quick-fix lunch idea, this recipe would come handy.
Egg Salad Sandwich

Ingredients
(Makes 3)
- Eggs – 5
- Bread – 4 slices
- Green leaf Lettuce – 4 leaves
- Mayonnaise – 1 tbsp
- Mustard – ¾ tsp
- Onions, diced – ¼ cup (Use shallots if you are not a budget, it tastes better)
- Garlic, crushed – 2 cloves
- Oil – 1 tsp
- Cilantro, chopped – 2 tbsp (Use other herbs like chives or green onions)
- Crushed red pepper – 1tsp
- Salt and pepper to taste
Method
Boil the eggs, cool in cold water and remove the shells. Break the boiled eggs into small chunks using a fork. Stir in the mustard and mayonnaise and mix well to combine. Season with salt, pepper and crushed red chili flakes.
In a small sauce pan, heat the oil and sauté the onions and garlic till brown. Remove from the heat and stir in the chopped cilantro.
Add the sautéed ingredients to the egg mixture and mix well. This can be refrigerated for at least two days.
Toast the bread till crispy and place a piece of lettuce and spoon in the egg salad mixture. I had this cold and it tasted great.
It is a very versatile recipe, try different spices and/or herbs in this for some nice variations. I sometimes add some paprika or curry powder to the shallots and garlic while sautéing.

I eat eggs and liked that most tempting sandwich in your picture. This is the next sandwich I’m making!
