Chicken and Baby Corn Fried Rice

I love December! Everyone is in a jolly good mood all the time, not much’s happening at work, too many parties to go to, commute is pretty good most of the days and the streets are so colorful! I am avoiding the mall these days, which is where most of the ugliness of the season takes place. Just thinking about January makes me so sad! It was so hard to go back to work on Monday after the Thanksgiving week. So January will be even worse, after all the Christmas and New Year’s eve fun! Everything will get back to normal all of a sudden without a break in sight till memorial day. I guess we just have to enjoy this season while we can!
Talking about the Monday after Thanksgiving, I was pretty depressed and was in a very lazy mood. We got back home early from work, but were not in the mood to cook anything elaborate. Fried rice is a great dish for such days, especially if you have leftover rice in the fridge. This fried rice was ready in a jiffy, and made a wonderful meal on its own.

Ingredients
(Serves 4. Measures for the sauces are just guesstimates, use more or less to taste)
- 1 boneless skinless chicken breast (~ 1lb)
- 1 can baby corn
- 3 eggs , scrambled
- 1 bunch green onions
- 2 tbsp thinly sliced shallots
- For the spice paste
- thinly sliced shallots – 1/4 cup
– 4 cloves garlic
– 4 dry red chilies - oil for shallow frying
- 4 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp white pepper powder
- freshly ground black pepper to taste
- salt to taste
- 4 cups cooked and cooled rice
Method
Pound the chicken breast with a meat tenderizer to flatten it as much as you can. Cut into thin strips.
Using a mortar and pestle, pound the ingredients for the spice paste – shallots, garlic and red chilies to make a coarse paste. Keep aside.
Slice the white parts of the green onions into thin pieces, and cut the dark green part to long strips.
In a large wok, heat oil and add the chicken pieces. Season generously with salt and freshly ground pepper and stir fry till the pieces turn white. Add 2 tbsp dark soy sauce and stir well. Cook till all the moisture gets completely absorbed and the chicken pieces starts to brown. Remove and keep aside.
Add some more oil to the wok and stir fry the baby corns for a couple of minutes till heated through, but still crispy. Keep aside.
Add the sliced shallots to the same wok and stir fry till brown. Remove and keep aside.
Now add more oil to the wok and add the white part of the green onions to the wok, saute till soft. Add the spice paste to the wok and stir fry till fragrant. Add the rice and mix well to coat the rice evenly with the spice paste. Add the remaining soy sauce, oyster sauce, rice vinegar and white pepper and mix well to incorporate. Cook for 2 minutes.
Mix in the prepared chicken, baby corns, shallots and the green part of the green onions to the rice and cook for three more minutes. Add the eggs and mix well. Serve warm.

the fried rice is sooooo tempting and I am gonna try this soon.
I dread to think that the next break after this holiday season will only be in May.
I came by to tell you I tried your eggplant Theeyal today. It was FABULOUS – delicious and so flavorful, the recipe is definitely a keeper. Actually, it tastes quite similar to a bitter gourd dish my mum makes – must remember to ask her how she makes it. Can’t wait to try the theeyal with prawns. I so know what you mean… but we get only a day off for Diwali, X’mas and NY… so it doesn’t matter that much… but the mood changes definitely.

That’s an interesting reason to avoid the mall. Most people are avoiding it for other (more practical?) reasons this time around.

People at home are not so interested in fried rice as there won’t be any left over rice at all (a strict rule). This chicken rice looks fabulous. Yeah its tough to get back to work after a long vacation (even though in India we do not have such long holidays) but not much is moving at the work front. Its actually a bitter feeling when my kids cry the day I leave for work after the holidays
