Hey, stop, don’t leave… you are in the right place… No, I haven’t suddenly turned vegan or anything like that. I had some leftover tofu that I was forced to buy, by a very persistent friend, some of which I successfully managed to hide in a guacamole. I was still left with almost 3/4th a block of soft tofu, so I asked my foodie friends here for some suggestions on what to do with it. I knew I could count on this lot, there were a lot of great ideas, and I picked the one dish that the majority favored – a tofu scramble. Rita -a non-blogger foodie I met through this blog – took the effort to write up the whole recipe for me, it sounded so simple and delicious, I decided to try it.
While it didn’t taste exactly like eggs, it almost fooled Siv. The dish looks just like scrambled eggs, and with all the nice spices added to this, it actually tasted great. Though I don’t think I will be replacing eggs completely with tofu now onwards, I will be making this version for my vegetarian friends for sure. I omitted coconut from Rita’s recipe, since I didn’t have any in stock, but grated coconut will make this even more delicious. So, fellow tofu haters, give this a try… I am a convert, I won’t be making disgusted faces at the mere mention of tofu anymore. I am glad I tried something new this year.

Tofu Scramble (Recipe courtesy Rita Shylesh Nair)
Ingredients
- 1 cup Soft tofu crumbled
- ½ cup Finely chopped shallots/red onions
- 1 tbsp Finely chopped ginger pieces
- 1 tbsp Finely chopped green chilies
- 1/4 cup Finely chopped tomatoes
- 1 tsp olive oil
- 1 tsp coriander powder
- ½ tsp cumin powder
- ¼ tsp turmeric powder
- 1 tsp freshly ground black pepper
- Salt to taste
- 1 tbsp thinly sliced green onions
- A few chopped coriander leaves
Method
Heat oil in a shallow frying pan. Add the onions, green chilies and ginger pieces and sauté till soft.
Add the coriander, cumin and turmeric powder and sauté for a couple of minutes till fragrant.
Add the tomato pieces and sauté for a minute.
Add crumbled tofu and salt and mix well, and sauté for 6-8 minutes to let the tofu to absorb all the flavors.
When the mixture is dry, add the green onions, coriander leaves and season with freshly ground black pepper.
Serve warm with bread, or even on its own. We had it as a sandwich, some bacon would’ve gone nicely with it
Note: I used freshly ground Sichuan Peppercorns which I have been using instead of black pepper in a lot of dishes, it takes the flavor to a different level!

I was just wondering.. What happened to shrimp and chicken?
ahhhh, that’s somehtig i MIGHT try. but i hate tofu heartily. so might go for the unhealthier paneer with this recipe
Sig I hate tofu. But I have been seeing few good toffu recipes around these days . I might try them again
Hey Sig–if you have anymroe of the tofu left (or you could always get another pack now that you’re a convert anyway ;)) try baking it (the scrambled version) in Phyllo pastry. I’d ideally wanna wait for your verdict but I have a suspicion it might be it’s-melt-in-the-mouth-delicious
Whoa!!Look who’s talking tofu
…but it does look yummmm! Thanks to you and Rita.
Are ya talkin’ to me? I almost left!!!
Looks good and tastes good once you get used to the texture and taste of Tofu. Enjoy!
Why is there no emotion for a happy jig?? i am so happy girl..i feel i need an award from Nasoya or someone for spreading the good word!!
First off that presentation looks really good and you are such a sweetheart..i am so overwhelmed…and why did you mention me only twice..i thought you should have sang some praises of me and thnked me for choosing this ingredient and leading u to the soy path..i am miffed
Tell me the truth…are you passing off eggs as tofu/soy???
Can’t tell that it was Tofu and not Eggs
I should give this a try soon.

But I hate tofu and I am sticking to it. with bacon may be will try
Your statement that you wont make disgusting faces doesn’t convince me of the conversion
Am so glad you tried Tofu scramble. That converted my husband too and now we make quite a few dishes with tofu.
Nice presentation.
Looks like our traditional Egg Scramble… Never tried Tofu.. So Have no idea how this will taste..
May be its time for me to adventure into Tofu..
Lovely! Scrambled tofu, especially with a few spices, is one of my favorites too, even though I eat eggs.
Sig, that looks delicious. I haven’t used soft tofu much, you are inspiring me to… will try it soon!
ahhh the recipe is just 3 days late. I threw out a hunk of tofu after a horrifying experince at thai red curry..
Good one, almost like paneer bhurji! Yummy! And girlie, vegan or not, i know when i am here, i am at the right place
Hey sig, where did u find sichuan pepper? Usually in Konakni cooking, we crush it in water and just use the juice. We call it teppal. I am yet to find it here(many of my readers have been asking for it). I never tried it crushing. I will have to try.
Tofu is another thing I never tried. Now I am all curious. I will buy some tofu this weekend.
For a non-egg eater like me, i think this is a suitable substitution.
Darn that looks good! I’ll definitely make it for my veggie friends too.
Siggy baby, Satyam para isn’t that Eggs?
What happened to my Carnivore friend?
Looking fwd to try this one… the pic looks beautiful!!!
i too am a tofu convert sig
i too am gonna post abt my recent love affair with tofu darling pretty soon
Hey sig….just as u converted to tofu i’d be too glad if you get converted to veegie
and post more dishes….tofu and non-veg are a strict no no…but i do the same with paneer !!
Sig, Roops gave me some more info about Sichuan pepper. She said the one available in Chinese stores is smaller than teppal and also not as sharp as teppal. Now I don’t know why those two have the same name :(. I had picked up the name from internet. If you bite on teppal, it gives a sharp tingling sensation. So we never eat it.
Yum! You’re becoming a regular tofu-monkey!
I love the idea of adding Sichuan peppercorns, can’t wait to try that out.
hahaha You were right. I actually thought that It must not have been you or there wud have been a mistake. Am glad to get an excuse to make something from you since I dont do Non-veg and alchohol! hahaha! Will give this one a try! Wud be glad if you cud participate in an maiden event hosted by me
Non veg entries fine !
Ur hubby is so lucky to have a wife like you. I wish like you I could make wonderful dishes for my hubby but I am too too lazy …. Enjoyyyyyyyyy ……..
awesome pic lady …..excellent one
I almost left
This looks neat..awaiting more tofu recipes!!
aha, this looks tempting, def gonna try this
Sig thank you for the acknowledgement and listing the recipe. I am really glad you tried it and liked it. The texture may take some getting used to. Perhaps the more hardcore carnivores will try it and like it besides gaining the additional benefits of phyto-estrogens in tofu. I got a chuckle out of reading the comments of those venturing into virgin tofu territory. I usually buy the tofu to make the Thai Tom Kha Ga coconut milk soup.
Peace & Good Eating! -Rita
