Tofu Scramble

Hey, stop, don’t leave… you are in the right place… No, I haven’t suddenly turned vegan or anything like that. I had some leftover tofu that I was forced to buy, by a very persistent friend, some of which I successfully managed to hide in a guacamole. I was still left with almost 3/4th a block of soft tofu, so I asked my foodie friends here for some suggestions on what to do with it. I knew I could count on this lot, there were a lot of great ideas, and I picked the one dish that the majority favored – a tofu scramble. Rita -a non-blogger foodie I met through this blog – took the effort to write up the whole recipe for me, it sounded so simple and delicious, I decided to try it.

While it didn’t taste exactly like eggs, it almost fooled Siv. The dish looks just like scrambled eggs, and with all the nice spices added to this, it actually tasted great. Though I don’t think I will be replacing eggs completely with tofu now onwards, I will be making this version for my vegetarian friends for sure. I omitted coconut from Rita’s recipe, since I didn’t have any in stock, but grated coconut will make this even more delicious. So, fellow tofu haters, give this a try… I am a convert, I won’t be making disgusted faces at the mere mention of tofu anymore. I am glad I tried something new this year.

Tofu Scramble

Tofu Scramble (Recipe courtesy Rita Shylesh Nair)

Ingredients

Method

Heat oil in a shallow frying pan. Add the onions, green chilies and ginger pieces and sauté till soft.
Add the coriander, cumin and turmeric powder and sauté for a couple of minutes till fragrant.
Add the tomato pieces and sauté for a minute.
Add crumbled tofu and salt and mix well, and sauté for 6-8 minutes to let the tofu to absorb all the flavors.
When the mixture is dry, add the green onions, coriander leaves and season with freshly ground black pepper.
Serve warm with bread, or even on its own. We had it as a sandwich, some bacon would’ve gone nicely with it ;)

Note: I used freshly ground Sichuan Peppercorns which I have been using instead of black pepper in a lot of dishes, it takes the flavor to a different level!

Hey Sig–if you have anymroe of the tofu left (or you could always get another pack now that you’re a convert anyway ;)) try baking it (the scrambled version) in Phyllo pastry. I’d ideally wanna wait for your verdict but I have a suspicion it might be it’s-melt-in-the-mouth-delicious :D

  21. shilpa on January 30th, 2008 1:04 pm

Hey sig, where did u find sichuan pepper? Usually in Konakni cooking, we crush it in water and just use the juice. We call it teppal. I am yet to find it here(many of my readers have been asking for it). I never tried it crushing. I will have to try.
Tofu is another thing I never tried. Now I am all curious. I will buy some tofu this weekend.

I got it from Whole Foods Shilpa… I had no idea we even had this in India!…

  22. grihini on January 30th, 2008 4:18 pm

Hey sig….just as u converted to tofu i’d be too glad if you get converted to veegie  and post more dishes….tofu and non-veg are a strict no no…but i do the same with paneer !!

  29. shilpa on January 31st, 2008 9:45 am

Sig, Roops gave me some more info about Sichuan pepper. She said the one available in Chinese stores is smaller than teppal and also not as sharp as teppal. Now I don’t know why those two have the same name :(. I had picked up the name from internet. If you bite on teppal, it gives a sharp tingling sensation. So we never eat it.

  30. Kaykat on January 31st, 2008 12:06 pm

    Yum! You’re becoming a regular tofu-monkey! :)

I love the idea of adding Sichuan peppercorns, can’t wait to try that out.

  36. Rita on March 2nd, 2008 3:13 pm

Sig thank you for the acknowledgement and listing the recipe. I am really glad you tried it and liked it. The texture may take some getting used to. Perhaps the more hardcore carnivores will try it and like it besides gaining the additional benefits of phyto-estrogens in tofu. I got a chuckle out of reading the comments of those venturing into virgin tofu territory. I usually buy the tofu to make the Thai Tom Kha Ga coconut milk soup.
:) Peace & Good Eating! -Rita

Thanks for sharing the wonderful recipe Rita!
