The holidays are finally over, time to get back to real life. We had a nice break at home, got used to sleeping at 2-3 am everyday and waking up around noon. It is going to take a little while before getting back to the rhythm of the office schedule from tomorrow. I want to kick start the regular blogging schedule on the new year by posting a recipe after the long break.

The good news about the holidays is that the major portion of the waking hours were spent around food. So I do have some recipes and restaurant reviews waiting to be posted. We had a great New Year’s eve, and I am still not completely out of it, so here is a simple recipe to start the second year of the blog.

This recipe is from the book A Passion for Tapas which my dear friend Sheela sent me last year. I have to say, these are the best roasted potatoes I’ve ever had! These went nicely with the Spanish Style Sauteed Chicken with Garlic , but this dish is flavorful enough to stand on its own. I modified the original recipe a bit by adding a generous serving of Spanish paprika to the potatoes, and substituting fresh rosemary sprigs with dried rosemary. I also increased the amount of garlic in the dish, to give a strong garlicky flavor to the potatoes.

Ingredients

Method

Preheat the oven to 400F. Peel the potatoes and cut into four or eight wedges depending on the size.

Place the potato wedges in a deep pan and add enough water to cover the potatoes. Add some salt to the water, and bring to a boil. Reduce the heat and simmer for 3 minutes. Remove from the stove and drain. Add the paprika to the potatoes and mix carefully to coat the potatoes.

Heat the olive oil in a roasting pan, or an oven-safe saute pan on the stove. Add the potatoes to the pan, and sprinkle the finely chopped rosemary over.

Place the pan in the pre-heated oven and roast for about 25 minutes, turning twice during this time. Add the shallots and garlic and cook for an additional 10 minutes, or until the potatoes turn golden brown. Season with salt and pepper, and serve warm.

Change the quantity of ingredients according to your taste. Since the garlic flavor was very dominant in my version, I am sending this to Sunita for her monthly spice event - Think Spice - Think Garlic.

    I have heard from people about this combination, Garlic and Rosemary, never tried that before. I will definitely try this next time…

    Garlic and rosemary is a great combo… I use them in a marinade for grilled lamb and grilled panner too… you must try the two together

    Crisp Potato wedges. Recently I had something similar, they served with a lemon wedge and drizzling lemon juice gave the potatoes a real kick.
    I like how crisp the potatoes look and like the new look as well!

    Deepa, sorry about the delay, and welcome to my blog… I forgot which potatoes I used in this recipe, but any small non-starchy kind will work fine!
