Peach Margarita

It’s been a busy week. Siv was in Dallas the whole week, and got back Thursday evening. Seattle had some heavy storm warning for Thursday, so I had my fingers and toes crossed till his flight landed and he got out okay. After the devastating wind storm we had in December 2006, that left about one and a half million people without electricity for several days and caused so much property damage, any storm warning here is scary!

I got out of work at 2 PM hoping to beat traffic and the storm, but everyone had the same idea! Traffic on 520 floating bridge was literally crawling ahead, and after sitting in traffic for a long while, I finally got on the bridge. Wind was almost 50 mph, and water was getting thrown over the bridge by the waves. The frickin’ bridge was rocking! One of the scariest experiences of my life! What I just didn’t understand was that people took so much time on the darn bridge! If you are on a rocking floating bridge in such a wind, wouldn’t you want to get out of there as soon as possible?  Yeah, it is scary to drive on a bridge that is moving like that, but it is even more scary if it actually fell down! I wanted to get out and shout – MOVE IT PEOPLE!

Here is a simulation of what might happen to the 520 bridge in case of a severe wind damage! Lucky I lived another day! :)

Anyway, after that ride, and to celebrate Siv’s homecoming, we had to drown a few drinks. Since I’ve had some frozen peaches in stock, ready for this month’s AFAM event, I made the easiest drink I could think of - a margarita! Give me a break, I just survived a near death experience people, so forgive me if I couldn’t come up with a more creative recipe :)

Ingredients

(4 drinks)

  • 1 lb frozen peach slices (2 large ripe peaches)
  • 3 tbsp agave syrup ( 3tbsp sugar)
  • 1 cup silver tequila
  • 1/2 cup Triple Sec / Cointreau
  • 1/4 cup pomegranate juice
  • 4 tbsp fresh lime juice
  • 2 cups Crushed/Cubed Ice

Method

Keep 4 peach slices for garnish and puree the rest along with the sugar/agave in a blender.

Place the ice in a pitcher, add 2 cups peach puree along with all the other ingredients and stir well to combine.

Strain into chilled margarita glasses, and garnish with peach slices. (Rim the glass with sugar if you like, don’t use salt like I did :) )

    Oh,Sig, I can understand your plight! My hubby was travelling to Papua New Guinea on some questionable airline when there was a destructive storm there…..I had all my limbs crossed and was glad he was safe!!!:) Ah, I need a drink to get that thought out of my head now!

    yeah, i am a worrier by nature, and when things like this happen, I can’t take it… lucky both of our stories ended on happy notes and a slight buzz:)

    Thanks Srivalli, that is margarita salt on the rim, but as I mentioned, the salt was a wrong choice for this sweet margarita. I’d go with sugar next time.

    The weather was pretty crazy! First that windstorm, which thankfully wasn’t as bad as last year, but then the lightning, thunder, and hail the next day! Crazy weather…

    yeah, last year was bad!!! I can’t imagine what it would’ve been like being on the bridge last year… the hail was scary this time…

    Sorry Richa, I forgot to note the brand, got it from Whole Foods frozen section… this was quite nice and fresh.

    Thanks Bharathy… Yep, that is salt, coarse margarita salt. But as I said in the post, you will be better off with sugar rimmed glasses, salt didn’t go so well in this.
