Yep, my Kerala recipes are still coming. I want to blog these mainly for my own future reference. All these dishes are completely mom-made, just writing these down will save me some dollars in phone bills in the future.

I had written about another pork dish a while ago, which needed a cut with a little fat on it, preferably pork belly. But for this dish, you could use a lean cut of the meat. This recipe works very well for beef too, and if you don’t eat pork or beef, you can use chicken, just reduce the cooking time accordingly.

Ingredients

Mix the pork with ingredients in section 1 and cook with a little bit of water till soft. This can be done in the pressure cooker (about 5 minutes on low heat after the first whistle).

Heat oil in a large stir fry pan and splutter the mustard seeds. Add the cloves, cardamom and cinnamon and fry for a few seconds. Add the sliced onion, ginger, garlic and green chilies and fry till the onion slices starts to brown. Add the curry leaves and black pepper powder and saute for a minute.

Add the cooked pork to the pan and stir fry till completely dry.

Serve hot with rice, or just serve as an appetizer with beer.

    hmmm… I do this too Sig… take pics and write down recipes when I go home… and then blog about them. I was joking to my mom last week that after years of failed attempts at keeping a recipe diary, I finally have a food blog… I can refer and so can the whole world :-)

    Sig, I would try this recipe with beef since we don’t eat Pork.
    I recently tried your favorite ‘jalapeno grilled with cheese and bacon’. The fun part is we almost had to call 911.

    When I picked up the peppers from the local farmers market, it was from the ‘Hot peppers’ section. Infact there were 7-8 varieties and all had named ‘Hot Peppers’. With my indian way of thinking, I thought , it must be a mistake. These are jalapeno peppers for sure. It looked slightly bigger, So I made that lady to select the smaller ones for me. She did it patiently.I thought they did not have time to put different labels as it’s such a small farm market. The peppers looked just like jalapeno peppers.
    When i made it, i didn’t have much time to remove all seeds. Again my thinking ‘No problem, we have eaten chillies much hotter than this..”
    Okay now I made it..not with bacon, since we are pork-free people , I made thin strips of ‘chicken bacon’ from chicken franks.
    Finally one of our friend asked ‘Ethinu enthu parayam?” My hasband replied ‘vazhakku parayaum after eating” and anyway our friend started eating the first piece came out of grill and he started jumping up and down like a monkey and warned his wife no to eat.(She is pregnant he did not want her to go for pre-mature delivery).
    It’s the hot pepper who cheated us and i will never ever assume things here. Specially in ‘pepper matter’.
    Sig, I am telling this story here as we had fun making and eating it. It was my mistake that I did not use the right ingredient. But I will try it again, as I thought it’s a fantastic appetizer.

    For got to ask you. I Are you adding a little bit red paint in your fish curries by editing the pictures..All your fish curries looks so ‘reddy and orangy” (in your language).My chillies are not so red…ha ha ha..

    Sig, i completely agree with writing down recipes soon! sometime i make a dish and the pictures rest quite a while and then i really have to think a lot to remind myself of the exact ingredients!! hey and i’ll ask again, where do you buy kudampuli : looks like you forgot to answer it last time ;).

    and i think by document Mom’s recipes you are doing a bit of public service too :).

    Raji, first of all thanks… :) I am majorly blushing here… and secondly… SORRY… :D don’t say I didn’t warn ya! :) Even jalapenos if not properly cleaned will make you wanna scream out in pain…. so I can just imagine how these hot peppers were :D Next time, don’t be lazy ;)… BTW, the secret behind the reddy fish curry is kashmiri chilli powder, and lots of it :) My mom makes her curries really hot…

    I use too do this Pork curry dry, with the left over pork gravy sometimes. I try to use pork less in my cooking because of the fat. But since this one uses lean variety I should try it to make my DH happy.

    All these things are always mom-made recipes!! Alle?? I too have a very typical mom-made pork gravy recipe, which I will be posting as soon as she makes it. Thankfully she stays quite close by.
