Summer is almost over, but there is no law against having a sunny cocktail on a dark cold evening, right? There is nothing that fills my heart with sunshine like a fresh tropical island cocktail, bringing back some sweet vacation memories of lazing on the beach…

A Pina Colada is normally made with pineapple, coconut cream and rum. Add one more fruit and you get drinks like strawberry colada, banana colada etc. Can you think of a more tropical combination than banana, pineapple and coconut?  A banana colada is not only refreshing, it is quite filling as well.

Ingredients

(4 drinks)

  • 3 ripe bananas, peeled, sliced and frozen
  • 2 cups unsweetened pineapple juice
  • 1/2 cup coconut cream
  • 1/2 cup dark rum
  • Toasted coconut and pineapple slices for garnish

Method

Combine all the ingredients in a blender and blend till smooth and frothy. If you forget to freeze the banana beforehand, add about a cup of ice to the blender.

Serve in a colada glass or a collins glass garnished with toasted coconut and a slice of pineapple.

Adjust the amount of rum according to your taste. Of course, you can omit the rum and make a virgin colada, but what’s the fun in that? I admit that this tastes best on a sunny afternoon, but a girl can’t stop drinking frozen treats just because it is cold outside!

This goes to Mandira of Aahar for this month’s Jihva for Ingredients – Banana. JFI was started by Indira of Mahanandi.

A daiquiri [daiki'ɾi] by definition is a mixed drink made with rum and lime juice. This Cuban drink was invented in 1905 and is known as Earnest Hemingway’s favorite drink (Remember what his second favorite drink was?). These days the term daiquiri is being used for a variety of frozen mixed drinks with or without lime juice and [...]

Grilled Trout in Banana Leaf
Grilled Trout in Banana Leaf

Cooking food wrapped in Banana leaves is an age old technique in Kerala. Our fish pollichathu is the most delicious form of fish that I’ve ever eaten! I wasn’t surprised to learn that the same technique is followed in other Asian countries too. Cooking this way keeps the food moist with all its natural juices [...]

French love their desserts, that is why they invented courses like Avant Desserts (pre-desserts) and Petits-Fours (a small cake generally eaten at the end of a meal). Normally the avant desserts are small in size, and contrast the taste of the main dessert to follow. Here is a perfect avant dessert recipe to serve before [...]

Inti – A Kiwi Cocktail

The weekend is almost gone, time to share another cocktail recipe. Siv is the de facto bartender in our house, he just throws in some mixes and drinks here and there and it turns out into a pretty good drink at the end. He is a scotch and beer guy himself, but loves to mix [...]

Blackberry Mojito

Mojito (pronounced moe-hee-toe) is Cuba’s most famous cocktail, and is supposedly one of Earnest Hemingway’s favorite tipples. The name Mojito is rumored to be derived from the word “Mojo” – remember Austin Powers? This refreshingly tasty drink in its purest form is made of five basic ingredients – rum, mint leaves, lime juice, sugar and club soda. You [...]
