Kerala Chicken Masala

Chicken Masala is such a generic term, I know. But not sure what else to call this dish, and to make matters worse, I make at least 5 different types of chicken masalas, so will have to just call these CM1, CM2 etc. I made CM1 as a side for Mutton Biryani today. Well, I don’t get the idea of having a strong meat curry with biryani, I personally think that the combination messes up both the Biryani taste and the curry taste, but Siv loves to have chicken/mutton curry with Biryani. Since he offered to cook the biryani, the least I could do was to whip up a chicken curry to go with it. I had the biryani with some plain raitha, Siv seemed to enjoy his meatfest. (Tamil style Mutton Biryani recipe to follow soon.)
Ingredients:
- 1 lb chicken cut into medium pieces
- To Grind:
- 10 dry red chilies
- 2″ piece of ginger
- 5 cloves garlic
- 1 tsp mustard seeds
- 1 medium red onion diced
- 2 tomatoes chopped
- 4 cloves
- 2 cardamom pods
- 1″ cinnamon stick
- A bunch of curry leaves
- salt to taste
- 2 tbsp oil
Method
Grind the ingredients in the To Grind section to a fine paste with a little water.
Heat 1 tbsp oil in a pan and fry the onions till golden brown, and remove.
Heat 1 tbsp oil in the same pan, add the cardamom, cinnamon and cloves and stir for a minute. Add the ground paste to this and saute till oil starts separating. Add the chopped tomatoes and stir till the tomato pieces are cooked.
Add cut chicken pieces along with the salt to the pan, mix well, so that the pieces are coated with the masala. Fry well till the chicken pieces starts to brown.
Add the fried onions and curry leaves to the pan and stir for another minute.
Add 2 cups of hot water to the pan, mix well and cook covered on medium heat till the chicken pieces are cooked through.
Serve with Mutton Biryani plain white rice or chapattis.

July 12th, 2007 @ 3:17 pm
Hi Anon, No I don’t remove the seeds, you can do it if you want to reduce the heat a bit. But if you ask me, it is such a painful task. Let me know how it turns out

Hi Sig,
I am planning on trying this Chicken masala recipe and also the Biryani, was wondering if you can show us a picture of the chillies you use and their name as I feel 10 chillies in the masala can be a bit too spicy if I am not using the right one.
Thanks.
August 5th, 2007 @ 3:59 pm
Hi anonymous, it is the regular dried red chillies that you fill find in Indian stores. Check out the picture here . 10 chillies were not too spicy for me, but by any means, you can reduce the number if you are not into spicy food like me… Let me know how it turns out.

Made this day before for dinner and it tasted wonderful! I made it as a gravy, reduced the coconut and increased the imli a bit. Was just perfect with steamed rice.
